Japchae 잡채 is a traditional Korean dish of sweet potato noodles stir-fried with vegetables, commonly served at celebrations and on special occasions.

Ingredients

  • Sweet potato noodles (Otoki dang-myeon)
  • ½ green pepper
  • ½ red pepper
  • ½ onion
  • 100 g spinach
  • 100 g oyster mushrooms
  • 50 g chives
  • 1 egg
  • Sesame oil

Sauce

  • 10 g chopped garlic
  • 15 g de aceite de sésamo
  • 50 g soy sauce
  • 25 g honey
  • 3 g of salt

Tip

  • * You can add any vegetables you like, such as pak choi, asparagus, carrots, etc.
  • You can use any type of mushrooms

Step by step

  1. 1 Soak the noodles for 1 hour before starting to cook.
  2. 2 For the sauce, mix the chopped garlic, sesame oil, soy sauce, honey and a little salt in a bowl.
  3. 3 Cut the peppers, onion, spring onions and mushrooms into strips.
  4. 4 Cook the noodles in a pot of boiling water for 6 minutes. Drain them, add a little sesame oil to prevent them from sticking, and set them aside.
  5. 5 In a frying pan with oil, first sauté the peppers and onion. When they soften, add the chives and mushrooms and mix well. Finally, when the chives are cooked, add the spinach, noodles and sauce. Allow everything to blend together and absorb the sauce.
  6. 6 Plate the noodles, add an extra drizzle of sesame oil, and place the omelette on top.
  7. 7 Optionally, prepare a thin omelette with one egg separately to add as a topping. We cut it into diamond shapes.
