Jeon 전 is a savoury Korean pancake. This recipe is an adaptation of the typical Nokdu-jeon (녹두전), a green soybean Jeon. We have used lentils as the main ingredient.
Ingredients
- 400 g cooked lentils
- 35 g of water
- A pinch of salt
- 200 g minced pork or beef (we used pork)
- 1 tablespoon of soy sauce
- 1 clove of garlic
- 15 g all-purpose wheat flour
- 15 g cornflour
- 60 g chives
Blanched Swiss chard
- 200 g Swiss chard
- Half a tablespoon of salt
- Hot water (enough to submerge all the chard)
Step by step
- 1 Blend the lentils with the water and salt until a paste forms.
- 2 In a separate bowl, marinate the minced meat with the chopped garlic, soy sauce and sesame oil. Leave to stand for at least 10 minutes to allow the flavours to blend.
- 3 Place the chard in a deep bowl, add salt and pour very hot water over it. Let it sit for 3-5 minutes, until it softens slightly but remains al dente. Then drain it well to remove all excess water.
- 4 Chop the chard and chives into small pieces.
- 5 In a large bowl, mix the lentil paste with the rest of the ingredients. Add the flour and cornflour, which will help to give the dough more consistency.
- 6 Heat plenty of oil in a frying pan over medium-high heat and pour in the mixture, forming a kind of omelette.
- 7 Wait until it browns and turn it over so that the other side browns.
- 8 Repeat the process until you have used up all the dough.
