Memil-guksu
Vegan Noodles

Simple, but full of flavour. This type of noodle is ideal for summer, as buckwheat helps to reduce body temperature.
Ingredients
- 180 g buckwheat noodles (soba)
- 10 g of chives
- 1 sheet of nori seaweed
- 2 tablespoons of sesame seeds
- 2 tablespoons of sesame oil
- 2 boiled eggs (optional)
Sauce
- 40 g soy sauce (Sempio guk-ganjang)
- 20 g sugar
- 60 g of water
Step by step
- 1 In a blender, grind the sesame seeds and nori seaweed separately.
- 2 Finely chop the green part of the chives.
- 3 For the memil-guksu sauce, mix soy sauce, sugar and water in a bowl.
- 4 Boil the buckwheat noodles (soba) for 4-5 minutes.
- 5 Boil the buckwheat noodles (soba) for the time indicated on the packet.
- 6 Cool the noodles with very cold water (you can add ice) and drain them.
- 7 Add on top: chives, sesame oil, sesame seeds, nori seaweed, boiled egg (optional).
