Pepper jeon is a very typical dish for Chuseok, a family celebration comparable to Christmas in Spain. Here is the recipe so you can celebrate even when you are far from Korea.
Ingredients
- 6 Italian green peppers
- 3 eggs for batter
- Soy sauce for dipping
For the filling
- 300 g of meat
- 150 g onion
- 150 g of carrots
- 2 cloves of garlic
- 5 anchovy fillets
- 1 egg
- 5 g of flour
- 5 g cornflour
- Salt to taste
Step by step
- 1 Chop the onion, carrot, anchovy and garlic.
- 2 Mix everything together with the minced meat and add the egg, flour, cornflour and salt. Mix well until you have a smooth dough and set aside.
- 3 Using a knife, cut the green peppers in half and remove the seeds.
- 4 Flour the peppers.
- 5 Fill the peppers with the mixture. Sprinkle a light layer of flour on top and dip the stuffed part in beaten egg.
- 6 Cook the jeon in a frying pan with plenty of oil over medium heat.
- 7 When they are golden brown, turn them over, cover the pan and let them cook through.
- 8 Enjoy them freshly made, with a little soy sauce.
